Gluten Free Broccoli Stuffed Chicken Breast
This stuffed chicken was fun to make and tastes delicious!

Notes
If you like cheese; could add 1 cup parmesan cheese* to vegetable mix before stuffing in chicken breasts. (*adding cheese removes recipe from whole 30 and dairy free recipe collection)
Ingredients
- 4-6 chicken breasts
- 2 cups chopped broccoli florrets
- 1 cup diced sweet red pepper
- 1 cup diced red onion
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons of olive oil
Instructions
- In large skillet; saute broccoli, red peppers and onion lightly in olive oil (or water). Set aside.
- On cutting board; layout chicken breasts. Sprinkle with dash of salt, pepper, garlic powder and paprika. Then cut a slice into the side of each chicken breast; making a pocket for the vegetable mix to sit in, not cutting all the way through.
- Preheat oven to 425 degrees F.
- Stuff spoonful(s) of vegetable mix to fill pocket in each chicken breast. Repeat to fill all chicken breasts.
- Heat a large skillet to medium heat and add 2 teaspoons of olive oil. Sear chicken for 4-5 minutes on each side and opening. Place seared chicken breasts in baking dish and cover with foil.
- Bake in preheatd oven for 15-20 minutes, or until chicken reaches 165 degrees.
- Remove from oven and let rest for 5-10 minutes. Serve warm.
