Gluten Free Cheesy Ham Egg Bites
These delicious Gluten Free Cheesy Egg Bites are filled with protein and easy on the go! Great breakfast for your student heading out the door or for your morning commute!
Filled with ham and cheese; all you need is some fresh fruit, toast and a glass of orange juice to make these little bites part of a complete breakfast.
I love making these for my kids on a morning that we are going to be heading out for sports, because they need good clean protein to fuel their bodies to be at their athletic best. I usually sneak in some veggies; like mushrooms and green onions without too much groaning from the peanut gallery!
My kids love having these for breakfast in the morning before school or on the weekends as a complete breakfast. Easy and fun! They can add whatever ingredients they want to make them their own.
You can make these into mini omelet muffins; just add your favorite diced veggies and bake as shown here.
The more veggies you put in; the more moisture you will notice comes out of these juicy bites.

Optional: 1/2 cup diced mushrooms, 1/2 diced sweet peppers, 1/2 teaspoon garlic powder

Ingredients
- 1/2 pound lean ham; diced
- 12 eggs
- 1/2 cup chopped onion
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Lightly grease 12 muffin cups, or line with paper muffin liners.
- Beat eggs in a large bowl.
- Stir in onion, diced ham, salt and pepper.
- Mix in cheddar cheese.
- Spoon by 1/3 cupfuls into muffin cups.
- Bake in preheated oven until a knife inserted near the center comes out clean, 20 to 25 minutes.
