Gluten Free Pamela’s Pancakes
One of our family’s favorite breakfast on the weekends is Gluten Free Pamela’s Pancakes! We love using Pamela’s Baking and Pancake Mix for fluffy and delicious hot cakes.
Ashley is the best pancake maker in our house; we ask her to make them for us every weekend!
I love making animal and shape pancakes for special occasions too! My kids love it when I make them to spell their names or make holiday themed hot cakes. I take special requests too!
When my son Austin was 5 or 6 years old; he asked me to make him an Optimus Prime Transformer pancake! That was a little out of my range of pancake designing; but I did my best to accommodate my little man. He was so happy that I did it! Not sure I really hit the target, but he sure was happy!
My daughter Ashley has always loved it when I write her name backwards in cursive writing so that it is perfect when I flip it over! This is always a challenge, but so much fun! Keeps me on my toes for sure!
Since Ayden was born; I haven’t had many special pancake making mornings. This makes them a real treat when I pull out the pancake designing funnel and start making animals, letters and Ayden’s name for him. He usually asks for very difficult animals and specific characters from his favorite Disney shows. Thankfully; he is always happy with the results and gives me a big smile when he says, “Thank you Mama”!
Whether you are looking to expand your creativity, create different shapes and sizes or just making traditional hot cakes; Pamela’s mix is great!
We have tried many different pancake mixes and use Pamela’s most often, and Bisquick Gluten Free other times.

Variations:
Chocolate Chip Pancakes: Sprinkle mini chocolate chips on top of raw batter after you have poured it out onto the pan, but before you flip to cook the second side. Add a few more on top!
Chocolate & Cinnamon Pancakes: Add mini chocolate chips and cinnamon to the batter and sprinkle a little extra on top.
Chocolate & Orange Pancakes: Add mini chocolate chips and orange zest or juice to the batter.
Blueberry Pancakes: Add blueberries on top of raw batter after you have poured it out onto the pan, but before you flip to cook the second side. Add a few more on top!

Ingredients
- 2 cups Pamela's Baking & Pancake Mix
- 2 Eggs (or egg replacer)
- 1 1/2 cups Water (or almond milk)
- 2 Tbs Oil (or 1/2 cup applesauce)
Instructions
- Mix all ingredients together until there are no lumps. Batter should not be too thin or too thick.
- Pour ¼ cup batter onto a preheated, lightly oiled griddle (medium low heat, or 350º for electric griddles).
- Cook until bubbles start to form and edges start to look dull.
- Flip once.
- Serve immediately.
- Extra pancakes can be cooked, cooled, and then wrapped in plastic and frozen. To reheat, remove plastic. Wrap pancakes in a paper towel and microwave until hot, approximately one minute.
