Gluten Free Gorgonzola Chicken Salad
This delicious Gluten Free Gorgonzola Chicken Salad is so good and full of flavor! The rich body of the gorgonzola mixed with the juicy chicken breast and crisp lettuce makes for a light and fresh salad any time of the day.
Whether you are looking for a personal salad, a dish to take to a party, a side salad to accompany dinner or a main dish; this salad is amazing. I make it for lunch for myself often. I have also taken it to a summer picnic or barbecue. My family will eat it with dinner or as dinner also!
I love the taste of gorgonzola, green onion and grape tomatoes together in a salad. It’s one of my absolute favorite meals for lunch or dinner. Easy to make with leftover chicken breast; you can whip this up in a snap!
If you don’t have chicken already made; you can grill some up, bake it in the oven or cook it in a skillet on your stove top. While it’s cooking; you can cut up all the veggies and get your salad ready to serve.
Sometimes I add mushrooms and red onion to add color and variety; love making salads!
When making this gluten free; you will need to make sure the gorgonzola is gluten free as most are not! That is something I learned the hard way and don’t want you to have to experience that mistake too! It’s never any fun to find out after the fact that your meal was not gluten free!
Here is the recipe for this delicious Gluten Free Gorgonzola Chicken Salad:
Ingredients
- 4 cups diced romaine lettuce
- 3 diced green onions
- 2 tablespoons gorgonzola crumbles
- 2 chicken breast; diced
- 2 tablespoons blue cheese dressing
- 6-8 grape tomatoes
- dash of pepper
Instructions
- In large skillet over medium heat; add olive oil, chicken and all purpose seasoning. Cook for 5 minutes; flip over and cook another 5 minutes or until chicken is cooked through. Remove skillet from heat. Allow chicken to cool for 5 - 10 minutes.
- In large bowl; place diced romaine lettuce and set aside.
- Place cooled chicken on cutting board to slice and dice.
- Add diced chicken to romaine lettuce and drizzle with blue cheese dressing.
- Top with gorgonzola crumbles, diced green onion, tomatoes and pepper.
