Gluten Free Garlic Shrimp
Gluten Free Garlic Shrimp is so light and fresh; easy to make and very delicious! One of my favorites during the summer months to have while sitting on the patio. A glass of white wine and a bowl of garlic shrimp go great together!
These delicious shrimp are Whole 30 approved when served in a lettuce cup, on a salad or ala carte. My family loves shrimp and garlic; so naturally it was an easy pairing for me when deciding on a dinner choice for Day 1 of my Whole 30 journey! I consider this Whole 30 recipe a starting point for many shrimp recipes. I have prepared these shrimp to use in pasta, tacos, salads, breakfast burritos, omelets and appetizers. Very versatile and easy to enjoy!
I usually have precooked shrimp on hand from Costco. They come uncooked and precooked; with tails and without. I prefer the tail-off shrimp so I don’t have to remove the tails and worry so much about pieces of the shell getting in the recipe.
When I want to make a shrimp dish all I have to do is pull a bag out of the freezer and heat them up quickly. This is great in the morning when you decide last minute to make a shrimp omelet or breakfast burrito!
Costco also carries fresh peeled garlic cloves; taking the work out of using fresh pressed garlic in recipes. I love it! I use my garlic press multiple times each day now. There’s nothing like fresh pressed garlic!

*Whole 30: Serve in a lettuce cup or in a salad.
*Can serve over rice if not avoiding carbs.
Ingredients
- 2 lbs of shrimp; tails-off (I usually buy precooked frozen shrimp from Costco)
- 3 cloves of garlic; pressed
- 2 tbsp fresh chopped parsley or parsley flakes
- 2 green onions; diced
- Optional: fresh squeezed lemon juice
Instructions
- In a large family skillet; add shrimp, garlic and parsley.
- Heat on medium and cover to steam; stir occasionally to mix.
- If using precooked shrimp; heat shrimp for 3 - 5 minutes. Watch shrimp so you do not overcook; they will shrink in size and turn rubbery if overcooked. (if using raw uncooked shrimp; cook thoroughly until shrimp meat is opaque and flesh is pink and there is no grey remaining).
- Remove from heat and serve warm. (optional: fresh squeezed lemon to taste)
