Whole 30 Day 2 (The “Hangover” Day)
Welcome to my Whole 30 Day 2 (The “Hangover” Day)! Every morning when I wake up the first thing I do is get out my Whole 30 Day to Day Journal. I read the tips and notes from Melissa Hartwig to inspire me for the day and then I write everything down I eat for the day to look back and reflect once my 30 days are successfully completed!
I start each day with a 2 tsp shot of Bragg’s Apple Cider Vinegar followed by 8-10 oz of water; to help with the cleanse and gut healing part of this journey.
Here’s a quick summary of Day 2:
Breakfast: Apple Cider Vinegar, Chicken Breast, Strawberries, Cashews, Water
Morning Snack: Hard Boiled Egg, Water
Lunch: Ground Turkey Taco Salad, Pico, Water
Afternoon Snack: Handful of Almonds, Water
Dinner: Costco Chicken Caesar Salad (without dressing, without cheese, without croutons), Water
Evening Snack/Dessert: Green Apple Slices, Water
Notes: While shopping at Costco I grabbed a quick bite for dinner rather than eating at home. I cut up the tomatoes and chicken to eat with each bite of lettuce. Not great, but worked in a pinch! I will make sure to have a dressing packet with me next time we go out shopping.
My Whole 30 Day 2 Snack of Hard Boiled Egg was delicious! I chose to bake my eggs in a muffin tin; rather than boiling them. What an easy way to make them! I don’t know that i will ever boil them again. All I had to do was preheat the oven, put the eggs in the pan, and set the timer! So easy!
I made a dozen eggs to have for snacks and making egg salad with Whole 30 approved mayo! I recently ordered the primal kitchen mayo two pack with regular mayo and chipotle lime, but have not received it to say if it is good or not! Once I receive it I will be making egg salad for a lunch option wrapped in lettuce cups. I love egg salad and am excited to try this gluten free, dairy free mayo that is whole 30 approved. I’ve heard great things about it and read the reviews that it’s great! We will see for ourselves soon!
Day 2 was a success! I did not experience the typical headache and “hangover” feeling that many people get. It’s possible that I drank enough water to keep me going and not have it! YAY! Now on to Day 3!
