Gluten Free Bacon Cheddar Stuffed Chicken Breast
I made this Gluten Free Bacon Cheddar Stuffed Chicken Breast for dinner and it was amazing! Day 15 of the Whole 30 and I was really craving a good old fashioned chicken dish that I could make for my whole family!
I knew I wanted something with cheddar cheese and ham but wasn’t sure that was going to be possible. Most hams have some sort of sugar for curing; cane sugar, brown sugar, corn syrup, regular white sugar, etc. Not to mention the nitrates that I cannot have on the Whole 30!
I specifically went to the grocery store to look for options to make a stuffed chicken roll up. Coming up empty handed looking for ham; I wondered if there was a Whole 30 compliant bacon that I could use instead.
As I was looking at the many different brands and types of bacon; the last package I picked up said, “NEW” and “Paleo” on it so I was hopeful! Applegate Naturals was my answer and saving grace! The “NEW” is Applegate Naturals NO SUGAR Uncured Bacon.
I haven’t made regular bacon for years, so this was fun! I typically make turkey bacon for my family to have a healthier option; however, there was not a turkey bacon to be found without a sugar ingredient.
It was delicious all by itself and scrumptious in the stuffed chicken breast! My daughter and I were in heaven as we enjoyed our Whole 30 compliant BACON CHEDDAR stuffed chicken breast! We even decided we would continue to use both the Daiya Cheddar Style Shreds and the Applegate Naturals No Sugar Uncured Bacon once we have completed the Whole 30 since it was so good together!
The only ingredient I changed for my husband and sons was the cheddar cheese! I used regular Tillamook grated cheddar cheese for the boys; since they are not participating in the Whole 30 plan.
This has got to be one of my favorite recipes to date! I could make this regularly for my whole family and we would all love it!

*Whole 30: substitute Daiya Dairy Free Cheddar Style Shreds and Applegate Naturals No Sugar Uncured Bacon
Ingredients
- 4 Chicken Breasts; flattened
- 12 pieces of Bacon; crispy
- 1/2 cup Cheddar Cheese; grated
- 3 Green Onions; diced
- 2-3 Tbsp Spice Island Garlic and Herb Seasoning (or your favorite all purpose seasoning)
- 8-12 Toothpicks
Instructions
- Fry Bacon in skillet until crispy or well done; set aside.
- Preheat oven to 375 degrees F.
- Using meat tenderizer; flatten each chicken breast to 1" thickness.
- Lay flattened chicken breast out on cutting board.
- Sprinkle 1/2 Tbsp seasoning on each chicken breast.
- Lay 3 pieces of bacon on each breast over seasoning; evenly spaced.
- Sprinkle 1/8 cup of cheese on each chicken breast; spreading evenly.
- Sprinkle 1/2 of a diced green onion on top of cheese on each chicken breast.
- Roll chicken breast up and secure with 2-3 toothpicks; placing in baking dish until all are in pan.
- Sprinkle remaining seasoning and green onions over top of chicken.
- Bake for 45 - 55 minutes until cooked thoroughly.
- Remove from oven and serve warm. Enjoy!
