Gluten Free Turkey Spinach Spring Skillet
After being off of the Whole 30 eating plan for the last couple of weeks and reintroducing carbs; I needed to make a fresh, clean meal for dinner! I threw together this Gluten Free Turkey Spinach Spring Skillet and it was perfect.
When it’s time to start cooking I love looking in the fridge to see what I have on hand. Most times I end up making something new for my family. Tonight I had spinach, tomatoes, miracle rice, chicken broth, ground turkey and parmesan cheese so I decided I would make a healthy spring skillet; full of color and flavor!
I used my favorite seasoning; Spice Island Garlic & Herb Seasoning that I order from Amazon or pick up at my local Costco when they have it on the shelf. I added a dash of salt and pepper to enhance the flavor of the chicken broth used.
Making a skillet with ground turkey and fresh veggies is one of my favorite types of food to make. Using chicken broth was perfect with the miracle rice since I wasn’t planning to use coconut aminos or any other sauces.
I didn’t want to take away from the flavors of the spinach, tomatoes, or beans; as using fresh veggies provides such a great fresh flavor. Especially the spinach! I love using fresh spinach in recipes when I can; it adds flavor and color to a dish.
Spring in the Pacific Northwest always brings the best fresh produce to the farmer’s markets from our local farms. When I get a chance to walk one of the markets I always find fresh produce and the most beautiful flowers to bring home to my kitchen!
Here is the recipe for you to enjoy with your family:
Ingredients
- 1 1/2 lb Ground Turkey
- 1 tsp Garlic & Herb Seasoning
- 1 c Chicken Broth
- 2 c Baby Spinach
- 1 can White Beans; drained
- 1 c Cherry Tomatoes; halved
- 1 c Parmesan Cheese; grated
- 2 bags Miracle Rice
- Dash of Salt & Pepper
Instructions
- In a large skillet; add ground turkey and seasoning.
- Brown turkey; add chicken broth and increase heat to bring broth to boil.
- Turn heat down and simmer for 7-9 minutes.
- Stir in spinach, tomatoes, beans and miracle rice; heat to warm.
- Stir in parmesan cheese and remove from heat.
- Serve warm and enjoy!
