Gluten Free Blueberry Turkey Spinach Salad
This Gluten Free Blueberry Turkey Spinach Salad is delicious and refreshing. The zest of fresh blueberries combined with ground turkey and spinach makes this salad mouth watering!
This salad is a Whole 30, Paleo, HGC, Gluten Free, Dairy Free, and Low Fat salad! It is my go to lunch when I’m feeling like having spinach. Easy to make and absolutely delicious! Blueberries…yum!
I stumbled upon this combination while on the HCG diet; due to a very restricted selection of foods. Walden Farms salad dressings were recommended by the dietician/naturopath that oversaw my HCG program. She likes using these dressings because they do not contain the sugar, fat, carbs and other restricted components in the program.
I now use Walden Farms Thousand Island salad dressing because it is sweet and simple; making it a great accent to the blueberries, turkey and spinach. I’ve tried several of their dressings and this is my favorite.
I usually make ground turkey a couple times per week; so I set aside the leftovers specifically for this salad to be easily made. My husband also loves this salad; taking it for lunch at work often.
Make this delicious salad for your family; the recipe is below:
Ingredients
- 1 1/2 lb ground turkey; browned (Foster Farms Fresh and Natural Ground Turkey used)
- 1 tablespoon all purpose seasoning ("Spice Islands" Organic Garlic & Herb used)
- 1 tablespoon diced chives ("Litehouse" Instantly Fresh Herbs - Chives used)
- 1/2 teaspoon turmeric (Simply Organic used)
- 1/2 teaspoon ground paprika ("Private Selection" ground paprika used)
- 3-4 cups of fresh spinach leaves (Costco's "Josies' Organics" Organic Baby Spinach used)
- 1 cup blueberries
- {Thousand Island Dressing is my favorite; however, you can use your favorite!}
Instructions
- In large skillet; add ground turkey, seasoning, chives, turmeric and paprika.
- Brown ground turkey. Set aside.
- In large serving bowl; place spinach leaves, add ground turkey and top with blueberries.
- Drizzle thousand island dressing or a sweet vinaigrette and serve!
