Gluten Free Crockpot Chicken
When you’re in the mood for Gluten Free Crockpot Chicken; fill up the crockpot and go! It’s super easy and absolutely delicious. I find myself making chicken on Sunday or Monday to have chicken breast available for salads, tortilla wraps, sandwiches and quick “throw together” meals.
This is so easy; just put your chicken (frozen or fresh) in the bottom, add your favorite seasoning(s) and a chopped onion and turn on low while you are away or home taking care of other home activities. A lot of times I have no clue what I’m making for dinner so I will make this main ingredient and plan later!
It’s so nice to be able to make enchiladas, tacos, soup, stir fry, salads, sandwiches and more quickly; so you are feeding your family something healthy that they enjoy.
When I am meal planning for the week; I know I have school and work lunches to think of in addition to dinners. This easy, set it and forget it chicken makes planning so easy!
Other times; I plan this chicken to be accompanied by rice and steamed veggies for dinner.
Some other meals I make this chicken for are: Chicken Enchiladas, Shredded Chicken Tacos, Chicken Burritos, Chicken Taco Salads, Chicken Tostadas, Chicken Noodle Soup, Chicken Sandwiches, etc.
Here is the recipe for Gluten Free Crockpot Chicken:
Ingredients
- 4-6 Chicken Breasts; Boneless, Skinless
- 1 chopped onion
- 2 garlic cloves; minced
- 2 chives; diced
- 1/4 tsp red pepper
- 1/4 tsp ground cumin
- 1/4 tsp pepper
- dash of salt
- *I like to use Spice Islands Organic Garlic and Herb Seasoning in lieu of seasonings above
Instructions
- Place chicken breast in bottom of crockpot.
- Sprinkle garlic, chives and spices over the top of the chicken.
- Pour chopped onion on and around chicken breast.
- Place lid on the crockpot.
- Turn on low to cook for 5-6 hours or high for 3-4 hours. *Don't overcook chicken or it will dry out.
